Having experienced a hustling and bustling New Year's Eve at Magic Kingdom Park, I fully support your plan of ringing in the new year at a Disney Resort hotel. Specific events vary by resort so my best tip is to snap a picture of the activity board at your resort soon after check-in. During my September stay at Disney's Old Key West Resort, there was an activity board displayed outside the lobby entrance as well as by the entrance to Conch Flats Community Hall. Throughout your stay, you can expect a range of activities such as poolside games, Mickey Tie-Dye, campfires with s'mores, and Movies Under the Stars. Based on past precedent, I also expect there to be a separate New Year's activity board. Previous New Year's offerings at Disney Resorts Collection hotels have included a New Year's Scavenger Hunt, holiday-specific pool games, Mickey and Firework Tie-Dye, and even a New Year's Eve Bash.
