How lovely that you're planning some birthday fun for your Princess!
Unfortunately, Rapunzel has not yet become a part of any regular Character Dining experiences. I certainly suspect and hope that she
will become a part of a dining experience in the near future.
Cinderella's Royal Table features Cinderella as well as some of her Princess friends. Belle, Princess Aurora, Jasmine, Snow White and even Ariel all may appear to visit with you while dining. The nearby Crystal Palace features Winnie the Pooh and Friends.
You can certainly plan for a Meet & Greet opportunity with Rapunzel. The long-locked heroine appears regularly in the Magic Kingdom's Fairytale Garden. Be sure to pick up a Times Guide and Park Map for the location and time(s) she'll be appearing throughout the day of your visit.
If you have plans to visit Epcot during your daughter's birthday trip, I highly recommend Akershus Royal Banquet Hall for
Princess Storybook Dining. It's my favourite Princess Dining experience and has been since my own daughter was about 5 years old! Much like Cinderella's Royal Table, this location features many different Disney Princesses and heroines who visit your table while you dine. I find breakfast to be the most enjoyable, kid-friendly menu of the day.
