Hi Alyson: Character dining at Disney World is extremely popular, so it's not surpirsing there is limited availability. It's possible to walk up to a Disney Restaurant without a reservation and wait for a table. You may be asked to wait for a while, so be prepared. In a handful of cases, I've seen the front desk at a restaurant tell Guests that they will absolutely not have room that evening and they are not accepting walk ups (I've seen this at Be Our Guest and Le Cellier and presumably it happens at other restaurants). So be prepared to dine elsewhere if you take the chance on a walk up. Walk up availability will depend on crowd levels, Guest demand, and cancelations that evening. If you have younger or older members in your party who are used to eating at set times, you may not want to take a chance on too many walk-ups. Your best bet for a walk up would be to head to the restaurant early to get your name down. I would also call Disney Dining every so often to check on last-minute cancelations.
Enjoy your vacation.
