To help you the best I can, Lisa, I will list my favorite things about each Moderate Walt Disney World Resort location and finish with my overall top pick.
Disney's Caribbean Beach Resort is a sprawling and colorful resort with 6 villages that each have their own pool. The main pool area is well themed and a lot of fun for kids. The Pirate-themed rooms are fun but a little far from the aforementioned pool and main centers of attention.
Disney's Coronado Springs Resort has an eclectic theme in 3 different Spanish-Colonial styles. They have the most dining options of the Moderate Resorts including the Maya Grill with delicious Margaritas and live entertainment at night. Also, Rix Lounge is a wonderful location for vibrant nightlife and specialty cocktails.
The Cabins at Disney's Fort Wilderness Resort seem like an opportunity for upscale camping, but the Mrs. has a thing against camping and will not even venture to try it. However, it is located at the same resort as the Hoop Dee Doo Musical Revue, my favorite show in all of Walt Disney World Resort.
With a combination of excellent dining, fantastic pools, 2 separate but equally magical themes and plentiful recreational activities,
Disney's Port Orleans - French Quarter & Riverside, would be my recommendation. Since the 2 resorts are so close, it's like having 2 equally magical Walt Disney World Resort locations for the price of 1.
