    I heard that Remy is no longer at Les Chefs. Is that true? I booked a reservation at 4:40pm (earlier than I would have liked) b/c of Remy, should we go to Monsieur Paul's instead? Which has better food?

    Sadly, you are correct.  Chef Remy made his last appearance at Les Chefs de France this past October.  Many, including myself, were sad to see him go.   Les Chefs de France and Monsieur Paul are very different dining experiences.  Over at Les Chefs de France, the atmosphere is that of a bustling brasserie.  The food is delicious, and the atmosphere is more family friendly.  Over at Monsieur Paul, you will find an elegant ambiance and gourmet, classic French cuisine.  Take a look at the links I provided you which should help you determine which better suits your wishes for a fabulous meal in "France."
