To answer your question, you can absolutely mix and match your
ticket types, but you’ll need to make two separate transactions. First, you would purchase the 3-Day 1 Park Per Day tickets, and then, in a second transaction, buy the 1-Day Park Hopper Option tickets for that last day when you want to hop between parks. Another option is to purchase the 4-Day 1 Park Per Day tickets and wait until the morning of your final park day to upgrade it with the Park Hopper Option. However, upgrading will apply to all four days of your ticket, which defeats the purpose, in my opinion.
Interestingly, I checked a random date next month and found that buying a 4-Day ticket with the Park Hopper Option was slightly cheaper than buying a 3-Day 1 Park Per Day ticket plus a 1-Day Park Hopper Option ticket. You might want to look into this option, as it could not only save you a few dollars but also give you the flexibility to hop between parks on any of your four days. Whether it’s to avoid heavy crowds, manage a park reaching capacity, or if you finish everything earlier than expected, having that flexibility could make a big difference!
