Hi Jill: In the vast majority of cases, it's possible to walk up to a Disney Restaurant and wait. You may be asked to wait for a while, so be prepared. If you have older or younger members in your traveling party who may be used to eating at certain times, you may want to have a back up plan (such as being prepared to eat at a quick service location if there is a wait that is too lengthy for you). In a handful of cases, I've seen the front desk at a restaurant tell Guests that they will absolutely not have room that evening and they are not accepting walk ups. So also be prepared to dine elsewhere if you take the chance on a walk up. It will depend on crowd levels and cancelations that evening.
Your best bet for a walk up would be to head to the restaurant early to get your name down. I would also call Disney Dining every day to check on last-minute cancelations. I don't know the size of your party or the time of year you are traveling, but my gut tells me that you may have good luck at Sci-Fi Diner, especially if you can be flexible with your dining time (like eating on the early or late side).
