Holidays at the Disneyland Resort is an incredibly magical time and I love to hear that you will be experiencing this with your group!
I am also a fan of the mid-day break. Taking some time to rest and recharge to feel fresh for an evening in the parks is something that I usually do when visiting Disneyland. Theme park reservations help to manage capacity, especially during one of the busier times of the year, the holiday season. There's no guarantee that a park won't reach capacity, however, it's fairly rare. While I can't make any guarantees, I do think that you will be okay for your visit.
