How do I go about ordering something special, edible or other for a retirement surprise to be in our room at arrival?

You also mentioned the possibility of having a celebratory meal in your room. While I am not sure which Disney Resort Hotel you will be enjoying, I do recommend that you reach out to the resort and inquire about in-room dining options available to you as options differ from resort to resort.
