One of the reasons I love the Walt Disney World Resort is that they do a good job of providing meal options to their guests who have special needs. My daughter has a shellfish allergy and I never worry about her. My nephew who has multiple food allergies had no issues when we were there in December.
When you make an Advance Dining Reservation, simply note your gluten-free diet. When you arrive at a table service meal, simply remind the server and the server will have the chef talk to you about options.
For a counter service meal, simply tell the cast member taking your order that you have a gluten-free diet. The cast member will then have someone help you choose a menu item.
