Hiya Crystal!
Welcome back again to planDisney! I see that you are a long-time fan of Walt Disney World and have worked hard to make all your trips magical!
I would love to be able to assist you here with this as one of my very good friends cannot eat gluten but also loves visiting Walt Disney World. She tells me that she loves going on vacation anywhere but she loves Walt Disney World Resort the most as she knows she can get a safe meal. I reached out to her and Cast Members and found out that at this time
Sleepy Hollow at Magic Kingdom Park does not have a gluten-free waffle. I asked specifically if they had a dedicated allergen-free fryer and they said "no." Now, that does not mean that when you arrive it can change as I find that dining experiences are always improving so I recommend visiting this popular Quick-Service location and asking to speak with a Cast Member.
Now, I don't want you to miss out on enjoying a delicious waffle so I did some research and found gluten-free waffle options nearby:
The Crystal Palace at Magic Kingdom Park-this is a buffet so there is a chance of cross-contact so I recommend speaking to a cast member who can work with you to provide a safe meal.
The Grand Floridian Cafe at Disney's Grand Floridian Resort & Spa is a gluten-free waffle with the option to add strawberries, blueberries, or bananas as a topping!
'Ohana at Disney's Polynesian Village Resort. It is at this all-you-care-to-enjoy breakfast you will find gluten-free waffles! They also have a gluten-free Cinnamon Sugar Doughnut to finish off the meal!
I do hope this helps and that you find delicious and safe meals everywhere you go on your upcoming trip!
Happy Planning!
