Ooo, can you imagine enjoying a morning latte from the
Cove Café while overlooking the ocean? It sounds like a wonderful way to start each morning during your cruise! I checked with my friends at Disney Cruise Line to see if sugar-free coffee syrup was offered; they weren't sure if it was an available option onboard. My advice is for you to bring your own from home, just so you'll be sure to have it during your cruise! I would make sure that the sugar-free syrup is in your carry-on bag and sealed in its original packaging when packing for your cruise.
If you haven't done so already, definitely give the agents at Disney Cruise Line a call to have your dietary restriction added to your reservation. They will make a note on your reservation so that your Server and Assistant Server will see it and be ready to help you make the most delicious and safe options at dinner each evening!
