Frustrated that I called first thing this am 180 days prior to our trip. Out of seven dining reservations only two were for the times and location we wanted. Where did I go wrong? Its off season dates as well.

You did nothing wrong - sometimes the most popular restaurants do become booked up very quickly. I would recommend that you keep trying for your preferred times and locations, and cancellations do occur. You may find it easier to keep checking online, rather than calling the reservations number - you can then try several options at your leisure.
