We have found the "special" paintbrushes on Tom Sawyer's Island before that we turned into a Cast Member for a treat. Are there any similar perks on any other rides?

Isn't finding the paint brush fun!  My sons ask to do it every time.  Oftentimes, Cast Members may surprise the first time riders of the day with an unexpected treat, but nothing is set in stone.  Tinkerbell's Treasure Shop in the Magic Kingdom allows the first guest who asks a chance to wake up Tinkerbell with a magic wand, and the guest often receives a certificate.  Ye Olde Christmas Shoppe also lets the first children who ask a chance to decorate a small tree.  When my sons did this, they received a personalized ornament as a surprise; and the tree had a sign showing they had decorated the tree that day.  I don't know if this happens every day, but it was a wonderful memory for all of us.
