Hey Kathleen, thanks for stopping by with your question. I think Disney has made great strides in providing great options for people with food allergies. It seems like every time I visit, there are new gluten free options popping up all over the parks.
I do know that Sleep Hallow offers gluten free options. You'll need to ask a Cast Member what your options are when you get there, I've heard they change once in a while. I do know that they don't offer any type of gluten free waffle options but will make a really nice fruit bowl instead.
Tortuga Tavern just updated their menu (I've linked to it) and the new offerings look great! I think a lot of options could be customized to be gluten free but again, you'll need to speak to a Cast Member when you get there.
If you are open to suggestions, I suggest checking out Columbia Harbour House at Magic Kingdom. The have a separate gluten free menu that you can request when you get there. I've heard their allergy free chicken strips are some of the best around.
I hope this helps. If you have any other questions, please feel free to come back and ask.
Happy planning!
