Two hours from landing time to dining is going to be tight. My suggestion would be to use a ride-sharing service like Uber or Lyft from the airport. That will take around 25-40 minutes of travel time, depending on traffic, to get on Walt Disney World property.
You haven't mentioned where your dinner reservation is. If it's at a
Walt Disney World Resort, you can simply drop your luggage off with Bell Services at that resort and retrieve it after your meal to take to your resort for check-in.
If it's at one of the theme parks or
Disney Springs, I suggest dropping your luggage at your resort with Bell Services (ask your car driver to wait for you), using the car to get to your dining location and then getting your bags when you come back to your resort for checking in.
I do think it's manageable to make your reservation, but I also know that flights are sometimes delayed. If I were you, I would attempt to push your reservation back a little if possible. If not, please note that they will generally give you a grace period for being late. I don't like to push it beyond 15 minutes, but I have known them to allow people in who are up to 30 minutes late. It will just depend on how busy the restaurant is.
