Thanks for your great question. Planning a Walt Disney World vacation with toddlers in mind can be super fun, but there is sometimes a little extra thought that goes into it in regards to dining, naps, transportation, etc. So, it sounds as if you are on top of things in this process.
Mickey's Backyard BBQ and
Chip 'N Dale's Campfire Sing-A-Long are both fantastic options for evening dining and entertainment. They are absolutely toddler friendly. In fact, I think the younger kids get the most out of it. At the BBQ, your child will enjoy the very kid-friendly food options such as hot dogs and macaroni and cheese. After this hearty meal at picnic tables, dancing and live music will begin. Keep in mind that there are characters such as Mickey and Goofy dancing with the kids, but this is not like other character meals. The characters will not stop for autographs and personal pictures. However, I have videos of my kids taking turns dancing with and around the characters and they absolutely loved it. At the sing-a-long, there is lots of fun in store with making s'mores and singing around the campfire.
In regards to the boat transportation to/from Disney's Fort Wilderness Resort and Campground, they run about every 20 minutes (maybe more often depending on the time of day). The ride itself takes about 15 minutes.
