You are going to fall in love with the new and spectacular Disney Dream! I've sailed twice on the Dream since her inaugural voyage in January and I can't begin to explain what a magnificent ship she is. I'm so glad you will have the chance to discover all that she has to offer first-hand.
As for dinner attire on the Dream, check out this
very helpful guide provided by Disney Cruise Line. For most nights on the Dream, "cruise casual" is acceptable. Just steer clear of shorts, swimsuits, and tanktops in the dining rooms. I think you'd be very comfortable in a sundress, cropped pants, or regular length pants with a nice blouse. The gentlemen in my family wore khaki pants with a nice collared shirt on those evenings. I do recommend that everyone in your party bring one special dress-up outfit for the more formal evening on the cruise. Gentlemen should bring a jacket and tie, particularly if you wish to dine in Palo or Remy. Keep in mind that if on any given night you prefer to have a very casual meal, you could always opt for the delightful buffet at Cabanas on Deck 11.
