First WDW trip Jan 25-Feb 2, wondering if this is a good time to visit with the shortened hours at all the parks? Will we miss fun things like fireworks, fantasmic, illuminations?

Hi Amanda!  If you don't mind a little cooler temperatures during the months of January and February then this is a great time for a Disney visit for lower crowds and shorter lines!

The parks often will have shorter operating hours but this is because the crowds are lower and they know the guests can enjoy a full day and see all they want to see in a shorter amount of time then during the busy summer and holiday months.  You will still see the fireworks at each park, the parades and entertainment, and great shows such as Fantasmic and Illuminations.  Fantasmic is not shown daily so be sure and check the park calendar and click on the days of your visit to see when this will be offered. Illuminations is a nightly event in EPCOT.  Obviously attractions and shows need to be refurbished from time to time and this can be done with short notice to guests. The beauty of a Disney vacation is that there is so much to see and do on property that even if your favorite attraction is down during your stay you will have a million other things to fill its time and place!
