I think either weekend you choose will be fine. The big event during that period is the Epcot International Flower & Garden Festival, which runs from March 3rd-May 16th. Disney also hosts "Disney's Grad Nite" April 23rd, 24th, 30th and May 1st for graduating high school seniors. This is at the Magic Kingdom so you may see a few extra teenagers if you visit that Park on those nights...
As for the Once Upon a Time Breakfast at Cinderella's Royal Table, they rotate Princesses periodically but when we visited in December, we saw Cinderella, Jasmine, Belle, and Aurora. Some of the Princess character restaurants are also adding Alice from Alice in Wonderland in rotation, apparently due to the upcoming Disney movie of the same name. We didn't see her at the Royal Table but she did show up at Grand Floridian's 1900 Park Fare restaurant.
