Hi Joseph!
Some panelists recently answered a question about planning a first time trip. Your children are much older than the children of the writer of the question, but it still might be useful to read the different viewpoints
here.
Be sure to order the free Walt Disney World
planning DVD. You should watch the DVD with your children and see what peaks their interest. I also recommend picking up the book "The Complete Walt Disney World" by Julie and Mike Neal. There are a lot of good tour books on Walt Disney World, but I especially like this book for first timers as it is packed with photos and some good tips; the photos help to get everybody excited for the trip and give a glimpse of all of the wonderful things to do inside and outside of the theme parks.
If your children enjoy thrill rides, then they may love Expedition Everest in Disney's Animal Kingdom and the Twilight Zone Tower of Terror and Rock 'n' Roller Coaster Starring Aerosmith in Disney's Hollywood Studios. They may also enjoy visiting Typhoon Lagoon and Blizzard Beach; the water in the parks are heated so it's not out of the question to enjoy the water parks in November.
It will be critical to have ADRs during the Thanksgiving break if you would like to dine in a Table Service (full service) restaurant. Advanced Dining Reservations (ADRs) can be made up to 180 days in advance. You may make on-line reservations
here.
Enjoy planning and please write back if you have any more questions!
