Hi Angela! I know what it's like to have a husband who is reluctant to travel with children. But you couldn't have chosen a better destination. The folks at Disney do their best to make everything as hassle free as possible, from taking care of your baggage and transportation via Magical Express to providing you with activities the whole family can enjoy.
I'm not sure what your budget is, but our family's favorite resort is the Yacht & Beach Club (both resorts enjoy the same amenities, but the
Beach Club is slightly closer to EPCOT). The pool at this resort is more like a water park, Cape May Cafe (located in the lobby) offers a character breakfast, the Boardwalk is right across the lake. You also are within walking distance to both EPCOT and Disney's Hollywood Studios. Besides all of this, there are games and activities scheduled throughout the day and in the evening for those guests taking a little break from the parks.
Other resorts that offer character dining are:
The Contemporary Resort - Chef Mickey's
Grand Floridian - 1900 Park Fare
Polynesian Resort - 'Ohana
Swan Resort - Garden Grove
With any luck and a little sprinkling of pixie dust, your husband will be looking forward to many more trips to Walt Disney World!
