First trip-- 2 adults, 3 kids (8, 5,4) small/average eaters. Don't like the idea of being tied to reservations for dinner every night- would the Quick Service plan be enough food and we could pay our way for a table dinner a couple of times if we wanted?

You certainly could pay as you go for a table-service meal here and there, Jennifer, assuming you can get a table.  Many of Disney's most popular restaurants fill up quickly, leaving little if any room for walk-up diners.  If I were you, I'd probably go ahead and reserve one or two table service meals at the restaurants that hold the most appeal for your family.  If you are too tired or busy to make the reservation, simply cancel it.

The quick-service meal plan may very well be plenty sufficient for your family.  In my experience, the quantity of food offered at Disney's quick-service locations isn't noticeably different than what is given in most table-service locations.  The difference, often times, is selection and food quality.  Not that there's anything wrong with chicken strips and burgers, but you're more likely to find more varied (and often times healthier) options in the table-service locations.  Hope that helps!
