We are first time visitors (4 and 7 year old children), staying in the campground, and plan on mornings in a park, an approx 5 hour break, then back for the night. With the relatively short park times, will we still need to rent a double stroller?

While this is very much dependent upon the energy level of your children, I would suggest renting a stroller at least the first day.    Until my youngest turned about six, I found that the younger kids got tired and needed the ability to save their energy and have a place to crash.    While the 5 hour break will definitely help, it sounds like your days will be fairly long given your morning and evening visits.    The good news is that you only pay once per day, so you can use the stroller again at night without cost.   If after the first day you find your kids are doing well and not spending much time sitting, you can try without or downsize to a single.   However, given it is your first visit and one of your primary family goals I am sure is to enjoy everything, it may be worthwhile to help preserve as much of your kids energy as possible.
