I'm assuming from the information you've given, your tickets don't include the Park Hopper option. Deciding which park to skip is a tough choice. They're all great and unique in their own way.
My family loves Disney's Hollywood Studios. We love the rides, shows, character meet and greets and Fantasmic! in the evening. I would put this on my list of parks to do on your trip.
If your family's interests are more focused on animal and wildlife, then you should go to Animal Kingdom. It also has a fantastic roller coaster (Expedition Everest) and 2 amazing shows Broadway style shows. It typically closes earlier than the other parks so if you had an evening you wanted to visit Downtown Disney, this would be a good option.
Epcot has 2 very popular attractions, Soarin' and Test Track that we love. My boys are similar to your kids' ages and they enjoy Innoventions in Future World. They also love The Seas with Nemo and Friends. There are a ton of fabulous places to dine in Epcot so if you're into food, this is the park for you. If your kids like exploring other cultures, they will love the World Showcase. IllumiNations is a great way to end the evening.
