Where can I find the showtimes for the Lion King and Finding Nemo for May 18th and 21st?

Hi Breanna!  You can find each theme park's calendar on the Walt Disney World website.

Here is the May calendar for Animal Kingdom.  You can click on each day to get a detailed listing of that day's times schedule.  I didn't see Finding Nemo listed on there, and it isn't scheduled for refurbishment.  So, I went to wdwent.com to find a listing of this week's times for the Finding Nemo show.  It pretty much keeps the same daily schedule and it looks like it will be at  11:00am, 12:00, 1:00, 3:00 & 5:00pm daily.  You may want to check the wdwent.com website the week of your trip, or you can always get a current guide at your resort for any of the theme parks.

I hope this helps!  Have a magical vacation!!
