My fiance' and I are going to Disney Oct 17-24th. We are interested in attending Fantasmic on the 20th. The Dinner package is offered, and we thought the italian restaurant sounded good, however, is the VIP ticket more money, and is it worth it?

My family has seen Fantasmic! with the dinner package and without it, Jessica.  Whether it's "worth it" is really a matter of your personal preference when it comes to standing in line.  The perk of the dinner package is that you are granted admission into a designated seating section of the amphitheater so you save yourself the trouble of standing in line for an hour or more.  But even with the dinner package, it's recommended that you arrive at least thirty minutes before showtime.

If you are planning to eat at a table-service restaurant anyway, then the Fantasmic! meal package is not that much more of an expense and it definitely comes with the perk of less waiting in line.  But since you're visiting during a only a moderately crowded time of year you'd probably be fine without it.  Good luck with your decision.
