Gosh, I can sure sympathize with your experience. I'm so sorry you haven't been able to do the
Watercraft Ski Adventure yet! Sometimes the fate of
Port Adventures is just beyond control, I know I've had a couple canceled during my cruises, too. It's always so disappointing. This particular excursion is still being offered, so my advice is to go for it! It does depend on the weather and some other factors, so you might want to schedule an additional activity just in case. I usually choose one adventure for the morning and have a little extra one (like a bicycle or snorkel rental) in the afternoon.
I actually did that exact excursion a few years ago! Driving the watercraft is a lot of fun and it's a chance to see parts of the island that most guests don't get to experience. It was definitely the most exciting version of "following the leader" that I've ever experienced. If you do decide to sign up again I would highly suggest excellent sunglasses (on a tether so you don't lose them) or goggles. There was a lot of salty sea spray happening!
My all-time favorite Port Adventure is
Parasailing at Castaway Cay! This one is also sensitive to weather conditions, but it's surprisingly relaxing (as long as you don't mind heights) and gives you a spectacular view of the island. Totally worth it!
