If your goal is to use your Disney Dining Plan Table Service entitlements to enjoy fantastic dining at Signature Restaurants, then go ahead and book those Advanced Dining Reservations!
When we do this, we'll use two Quick Service entitlements at locations where the menu is more substantial, such as
Sunshine Seasons, in Epcot's The Land pavilion, or
Wolfgang Puck's Express at Downtown Disney Marketplace. If you arrive late enough on your first day, you may have a QS entitlement that you didn't get to use (perhaps you can't eat a late lunch AND a Table Service dinner just a couple of hours later); this will help on those days when you don't have a TS entitlement because you've used double entitlements for Signature Dining.
Of course, if you plan to book ADRs for each day, regardless of Signature Dining, be smart about which locations at which you'll pay cash and which you'll use your DP. For example, check the menu for Sci-Fi Dine-In Theater Restaurant, located at Disney's Hollywood Studios, and you'll see that many of the entrees are far less expensive than those elsewhere. The New York Strip Steak is currently priced at $29.99, whereas a New York Strip Steak costs $32.99 at Coral Reef Restaurant. Once you've booked your ADRs, check out the restaurants' menus to determine which are more generally the more expensive in your list and pay for the others out of pocket.
