According to weather.com, the average daily temperature in April is a high of 83 degrees and a low of 60. When we traveled to Disney World in April a few years ago, it was absolutely beautiful. The weather was in the high 70's and low 80's.
You will be visiting during the Epcot International Flower & Garden Festival. This special event filled with Disney character topiaries, a colorful array of flowers, gardens, live music and special presentations. You can read more about that

Children under age 3 are free with a paying adult, so your 2 year old will not an admission ticket.

Cinderella's Royal Table is wonderful and it's located inside Cinderella Castle. You'll see Cinderella and 3-4 of her Princess friends.
2) Princess Storybook Dining at Akershus in Epcot's Norway is another option to see several Princesses.
3) Cinderella's Happily Ever Dinner at 1900 Park Fare is a great dinner. You will see Cinderella, Prince Charming, the wicked step-mother and step-sisters (Lady Tremaine, Anastasia and Drizella).
