You must be so excited, Jeannine, about your family's upcoming trip to Walt Disney World!  I'm thrilled for you!  My sister's family has been to Orlando in early May more than once and they love to visit at that time of year.  With highs in the mid-80s, the weather makes you feel like summer is coming but has not yet arrived full blast.  Lines to attractions are not terribly long yet as most of the children nationwide are still in school.  Sounds like a great time to visit Disney!

As for a day-by-day trip plan, you will have all kinds of flexibility because you have park hopper tickets.  Nonetheless, this is the plan I would follow if I were visiting during the dates of your vacation:

Wednesday, May 4th (Magic Kingdom, as per your suggestion)
Thursday, May 5th (EPCOT's Future World)
Friday, May 6th (Disney's Hollywood Studios)
Saturday, May 7th  (Disney's Animal Kingdom in the morning, EPCOT's World Showcase in the evening)
Sunday, May 8th (return to your family's favorite park)
    Monday, May 9th (travel day)

With little guys in your travel party, I suggest getting up early and being at the park of the day at opening time.  You can see so much in those first few hours after rope drop.  Then you could take your sons back to Disney's Pop Century for a nap and some pool time mid-day, if you like.  That plan worked really well with my son when he was younger.  Also, I would recommend scheduling a character meal with your kids (Crystal Palace or Chef Mickey's, perhaps) so that your boys can dine while the Disney characters come to visit them.  What great photo opportunities this will generate!
