I think you'll find that your food options at Walt Disney World will still be magical! WDW caters to guests with special diets.
You'll want to review the
Special Diets info and then contact the department. Make sure to note your dietary restrictions on your dining reservations. When you arrive each table-service restaurant, ask to speak with the manager and/or chef. At buffets, the chef will usually walk you through the line explaining your safe choices. Many restaurants such as Yak 'n Yeti at the Animal Kingdom are known for creating memorable meals for guests with gluten-free diets.
Look for gluten free snack items at counter-service restaurants such as gluten-free chocolate chip cookies and Divvies Popcorn. These are pre-packaged. When you arrive a quick service restaurant, ask what your options are for dining gluten-free. Check out the quick service restaurants that can accommodate special diets at the above link.
I would suggest seeking out some additional resources such as visiting the Disney Food Blog at www.disneyfoodblog.com for special diet info including pictures of actual meals.
