I am a big fan of Moderate Resorts. They are really very nice, especially since they now have queen beds. The themes are great, the room sizes are not too bad, and the prices are usually reasonable.
The biggest difference you might find is that the rooms do not have the extra daybed that you might be used to at many of the Deluxe Resorts. I'm guessing one of your kids takes one bed and the other the sleeper, so you might miss that. There are some rollaways available for a fee, so inquire with your resort if you could have one delivered to your room.
Another difference will be the location. Most Deluxe Resorts have close proximity to one of the theme parks. With the Moderates, you will have to take a bus to any theme park.
I think the two nicest Moderate Resorts are Port Orleans French Quarter and Coronado Springs. My favorite, French Quarter, is the smallest of the Moderates with about 1,000 rooms. Everything at the resort is very easy to walk to, there are rooms with nice water views of the Sassagoula River, and you can even take a boat to Downtown Disney.
Coronado Springs is huge with over 2,000 rooms. There is a lot of walking here, but the grounds are beautiful and the rooms are very modern and comfortable. When booking, request a room that is either near the lobby, otherwise you will be walking a lot. There are several pools, with an amazing main pool across the resort. In lieu of a traditional food court, they have the Pepper Market which is set up in stations with many delicious options.
If you go with a Moderate, my first choice is French Quarter.
