Hi Chris! Since your trip is coming up quickly you might not be able to get advanced dining reservations inside the parks as those are the hardest to get and book up months in advance. I would certainly get on line and see about some of the other super choices in the resorts and Downtown Disney. Give yourself flexibility to eat at off times and try to secure one table service reservation per day. We have always found it was a great way to make everyone slow down and fun to just sit and talk about the magical day.

Cape May at the Beach Club resort (easy access to/from Epcot)
Captain's Grille at the Yacht Club resort (easy access to/from Epcot)
O'Hanas and Kona Cafe at the Polynesian resort (Magic Kingdom location)
Wave at the Contemporary resort (Magic Kingdom location)
Trails End at Fort Wilderness
Boma and Sanaa at the Animal Kingdom resort
If you can't get in park dining reservations these are my favorite quick service spots in each:
Animal Kingdom- Flametree Barbecue
Magic Kingdom- Casey's
Epcot-Cantina de San Angel or Liberty Inn
Hollywood Studios- ABC Commissary or Studio Catering Co
