Hi, Hilary!
Wow! What a great time of year to visit Walt Disney World!
There are so many options to consider, but I would suggest that you try to visit each of the four parks for a full day / night. Magic Kingdom will likely be a park you'll want to visit two days, with Epcot and Disney's Hollywood Studios each needing a full day / night to tour properly. Disney's Animal Kingdom usually closes much earlier than the other parks, so you'll have that evening to try something different. (We usually head over to Downtown Disney for some shopping and Dining that evening or just head back to our resort for a relaxing dinner and some pool time.)
Adding the Park Hopper Option will enable your family to visit more than one park each day and while we try to keep our park hopping to a minimum, there are days when breakfast in one park and dinner in another is the perfect plan for us. If you'd like to have more options when planning your trip, adding the Park Hopper Option is the way to go.
The Epcot International Food & Wine Festival ends on 11/11/13, so you might want to spend one of your first days there, enjoying the additional food and beverage options throughout the park. Over at Magic Kingdom,
Mickey's Very Merry Christmas Party (a separate ticketed event) would be a great way to add some holiday magic to your tour as well. If you don't want to attend the party (held on 11/11, 11/14 and 11/15 this year), plan on visiting MK on a different day, as the park will close at 7:00 p.m. on Party nights.
Send more questions as you think of them, Hilary; I'd love to help you play your stay!
