Hi there, Lisa! Welcome to the
Disney Parks Moms Panel! I love those Disney food traditions -- the ones that you look forward to with each trip and remember long after your vacations are through! We have many that we cherish in my family, and I can tell how much this one means to you. I’d love to help you try to recreate this in your kitchen.
It looks like the Brassert Biff was an offering at
Akershus Royal Banquet Hall Red Wine Braised Beef, Roasted Garlic Mashed Potato, Pickled Mushrooms, Baby Vegetables, and Strawberry Port Demi Glaze. While I do not have an exact recipe, I think we can piece it together! I was able to find a recipe on Food.com for Red Wine Braised Beef Shanks with Roasted Garlic Mashed Potatoes. It is a recipe that requires some tender loving care, while you braise the beef shanks for 2-4 hours! The only thing missing is the baby vegetables and Pickled Mushrooms. I found a recipe for the Pickled Mushrooms on Momsdish that looks amazing, just don't forget to have some vinegar on hand! Lastly, to make a Strawberry Demi Glaze, Taste of Home states that you Stir together 1 cup Strawberry spreadable fruit, ¼ cup port wine, 2 tablespoons balsamic vinegar, and ½ teaspoon brown mustard. After bringing to a boil; cook and stir 3-4 minutes or until slightly thickened. Follow these steps and -- voilà! -- you’ll have your Norwegian dish du jour!
Lisa, I hope that these steps help you recreate something at least close to the dish you so fondly remember! For more Disney Food inspiration, check out
Be Our Chef on Disney+. The show brings families together to recreate some of their favorite Disney dishes! Who knows, maybe someday you’ll see Brassert Biff pop up on the menu!
Lisa, thanks for stopping by, and please do not hesitate to return to see us in the future if we can help you make Disney magic in any other ways!
Enjoy your meal!
