Disney's Coronado Springs Resort is a very good choice to stay! My family and I have stayed there in the past, and we thoroughly enjoyed ourselves! One of the highlights of our stay was the
Dig Site, a pool area with a very cool pyramid with steps of streaming water, and the largest hot tub of all the
Walt Disney World resort properties! My son also enjoyed the Dig Site playground area, located right behind the pool area.
In terms of making choices off the regular menu, my suggestion is to ask your server what (if any) special accommodations they can make to accommodate your child's palate. In some instances, the Chef will actually come to your table and provide you a list of alternative selections. My son was also a very picky eater when he was younger, so sometimes we would ask for something that wasn't on the menu (for example, my son only wanted a grilled cheese), and they accommodated us. Now, I can't guarantee if they would substitute what's on the menu with, say, a cheeseburger, but it never hurts to ask.
I should also note that if they do accommodate the request, this may be charged separately (or in addition to) your other food choices. For example, if you're on the
Disney Dining Plan, you may have to pay that special food item outside of the Dining Plan, which would constitute a separate charge. However, if it makes your child happy, then it's certainly worth it right? :-) My son, "Mr. Picker Eater" in his younger years, was very satisfied to have that grilled cheese on that day! Still, the key is to ask and see what other food options they may be able to provide for your wonderful child.
