Audrey, I do highly recommend you make reservations for your table service meals. Quick service meals do not need reservations.
With the Disney Deluxe Dining Plan you have the entitlements to enjoy table-service meals, so try planning at least one sit down meal per day. Character dining, dinner shows, and signature dining restaurants will definitely need advance reservations. While having to plan around dining reservations can be cumbersome, walking into a table service restaurant usually involves a long, frustrating wait. You want to spend your time enjoying the parks, not sitting waiting for your table to be ready. My family also finds having reservations helps our itinerary have some structure, gives us events to anticipate, and allows us to avoid trying to find a place to eat when we are cross and hungry.
