Hi Dawn! Yikes yes you need to get started so you can grab some dining.  Luckily it is a great time to go when the crowds are not too high and before the Martin Luther King weekend.

I would start on the 12th with the Epcot park which will stay open until 9pm. They have many good restaurants to choose from with the dining plan.  On Sunday you might consider the Magic Kingdom park since this park will have the Extra Magic Hours and stay open until 10pm for resort guests.  I would choose Hollywood Studios for my Monday visit with the Extra Magic Hours being from 7-9pm. Tuesday I would head back to Epcot and do some of the things you might have missed on your arrival first day.  Your last day, Wednesday, you can head over to the Animal Kingdom park with its Extra Magic Hours from 8-9am.

My top dining spots if you are able to secure reservations are as follows:
    Magic Kingdom-Liberty Tree Tavern
Epcot-just about any in the World Showcase....just pick according to your family's tastes
Hollywood Studios-Prime Time, Sci Fi, Brown Derby, and Mama Melrose
Animal Kingdom-Tusker House, Yak and Yeti but we often forgo reservation dining here and grab the great barbecue at Flametree

Favorite resort dining: Citricos, Yachtsman Steakhouse, Narcoossees, Flying Fish, JIkos, Bomas, Artist Point, Whispering Canyon, and Captains Grille.
