This is my families first time at Disney. We want to eat at chef mickeys and the princess lunch at epcot. How do I know which day to book them for when I dont even know what park we are going to on that day. So confused please help?

Hello Jodi!  Oh, I know how you feel!  I always get a headache with I begin setting all my dining reservations.
The good news is that Chef Mickey's is located in Disney's Contemporary Resort.  You will not have to worry about what park you will be at because of this.  Although, the Contemporary Resort does have very easy access to the Monorail System (the monorail runs through the resort) and can easily transport you to the Magic Kingdom and to Epcot.  You may want to keep this in mind.
I am not sure if you are purchasing the Park Hopper option.  If you are, you will not have to worry about what park you will be at since you will be able to "hop" to as many parks as you like.  If you do not have the Park Hopper option, I would simple just make my reservation and plan to be at Epcot on that particular day in order to dine with Disney's Princesses.  I would also check the calendar for Epcot (click on Epcot, click on calendar, then click on the number date)  to see how long Epcot will be open for the dates you are there.  I would choose to make my reservation on the date that Epcot stays open the latest.  You just want to make it a full day.
Well, I hope this helps with your question.  I know how confusing the whole planning process can be.  Come back and visit me again with any new questions.
