Hi Ashley! First, I want to compliment you on being a great planner! Knowing the Extended Evening Theme Park Hours perk, for Guests of deluxe Disney hotels, shifts away from Magic Kingdom to other parks in the fall is impressive! The exact date for that shift to occur is not yet known.
Extended Evening Theme Park Hours are my favorite perk of staying at a deluxe Disney World hotel. In fact, I’m such a big fan that I try to plan my visits to Disney World around that perk at Magic Kingdom. While I don’t know the exact date of the change occurring, I can share that the best planning resources (links included) are:

The Disney Hours & Events Calendar – the calendar includes dates for the Extended Evening Theme Park Hours perk.

The Magic Kingdom Calendar – when the Magic Kingdom page opens, click on the little calendar icon that states, “Park Hours.” Search for your preferred date and look at the list of events scheduled for the park.

Mickey’s Not-So-Scary Halloween Party Dates – knowing the annual Halloween party begins in August, means that the Extended Evening Theme Park Hours perk will shift away from Magic Kingdom soon. The change doesn’t necessarily coincide directly with the start of the party, but shortly after.
