Kristi, you have narrowed your search down to two great choices for your stay at Walt Disney World.
I am partial to the Fort Wilderness cabins as I believe they offer not only a great accommodation to families but also a very different experience that many guests will never know. There is one bedroom with a double bed and a bunk bed. In the hall is a large bathroom that is supplied with towels and all amenities as a regular resort would offer. There is a full kitchen and pantry and a table with seating for 5 or six. The living area has a sofa, coffee table, television and DVD player and a small table and two chairs for the younger ones. There is also a double Murphy style bed that folds down at night. I have actually used this and it is quite comfortable. Outside is a large deck and a grill and picnic table.
What you will get at the cabins that you won't have at Port Orleans is the full kitchen, two TV's and a DVD player. It is rustic but clean and comfortable. There is an internal bus system and buses will get you to all parks with a boat getting you to the Magic Kingdom.
You can buy supplies at one of the two Trading Posts, enjoy great swimming at the two pools, and experience other fun things like canoeing, horseback rides, pony rides, Hoop Dee Doo Revue, and Mickey's Backyard Barbecue. One of my favorite spots at night is on the beach to watch the Magic Kingdom fireworks and also the Electric Light Parade on the water.
