Disney's Skyliner is an easy, efficient, and comfortable way to travel around but I fully understand your friend's desire not to use it with their fear of heights - I always liken the Skyliner to an attraction all of its own, with a spectacular bird's eye view of the Resort as you travel along.
Currently, there is no regular bus service from Disney's Riviera Resort to EPCOT or Disney's Hollywood Studios - unless the weather is inclement and they cancel the Skyliner - then they will provide buses for those routes. I realise this is not the most reliable way of planning your day, however, so I would recommend using an Uber or Lyft ride as an inexpensive alternative. I have used Lyft myself, both alone and with friends, and enjoyed the efficient service. I downloaded the Lyft app which gives you a selection of available cars (with prices and varying pickup times). You make payment on the app before your ride, so it's really easy. You can also order a
Minnie Van via this app if you fancy travelling in style! My tip: you can download the app while you are in the UK, and set up a dummy request from your hotel to the theme parks - you can then get an idea of current prices and what is available - remember to do this at the equivalent Florida time, so you get a true quote.
You will love staying at Disney's Riviera Resort. I have been lucky enough to dine there a couple of times for dinner and breakfast at
Topolino's Terrace - Flavors of the Riviera - and I highly recommend both, not least for the spectacular views from the outside viewing deck. Remember to make your dining reservations at 60 days out as this location is very popular.
