Decisions, decisions. Given the ages of the children, you could do Magic Kingdom for two days and Animal Kingdom for one day. We always plan at least two days in Magic Kingdom because there is so much to experience. In between the rides, our girls love the
Swiss Family Treehouse,
Tom Sawyer Island and the
Casey Jr. Splash 'N' Soak Station. And, of course, the Happily Ever After fireworks show is AMAZING!
At Disney's Animal Kingdom, the animals are stunning. Our girls love Kilimanjaro Safaris, Na'vi River Journey and the Festival of the Lion King show. In between the rides, they still run to play in
The Boneyard. On our last visit, we did the River of Lights dining package with Tusker House restaurant. The show was gorgeous and there was a 2-year old behind us who narrated the entire show. Priceless.
Cindy, if you want to consider another park, I suggest Disney's Hollywood Studios. The 5-year old and 7-year old could wield lightsabers at Jedi Training - Trials of the Temple. We always do a pre-park opening breakfast reservation at Hollywood & Vine so that we can sign-up for Jedi training before the crowds arrive.
