You are going to be at Walt Disney World at one of the busiest times of the year. So my suggestion is try to get to the parks as early as possible and plan to be there all day, specially New Years Eve. Unless it's truly something you want to experience, I would not go to Magic Kingdom on New Years Eve. It's going to be much more crowded than the rest of the parks. Epcot will be second and will have a more adult atmosphere. I would go to those two parks on alternative days. I found out during the 40th Anniversary celebration that the resort concierges know everything that is typically going on in the parks so talking to them when you arrive and getting a feel for the crowd levels is a great step.
