I am a HUGE fan of tours and special experiences at Disney World and
Backstage Magic is one of my favorites!
You are allowed to take notes during the tour. You are also allowed to take photos when you are in areas that are considered "on stage" but are not allowed to take photos when you are visiting any "backstage areas". Your tour guide will remind you every time you enter a backstage area.
Currently, lunch included in the Backstage Magic tour is at the Whispering Canyon Café. You can chose from sodas (they feature Coke products), tea, water or coffee to drink. It is incredibly yummy and the Cast Members there are very entertaining. Be sure to ask for ketchup (even if you don't need it) to see what happens.
There are scheduled bathroom breaks and of course they will accommodate anyone that really needs to make a restroom stop as quickly as possible. I never passed up a scheduled chance and recommend everyone do the same.
There are moments of down time at lunch and on the bus as you travel from location to location. The Backstage Magic tour moves along as there is a lot of ground to cover but I have never felt rushed. One of the times I took this tour, there was an older couple both using ECVs and they never seemed to feel rushed. I think most Guests are able to handle the schedule just fine.
