It's always fun to look back on fun trip memories, and seeing a point of view video of an attraction transports me right back to the magic. I just happened to be walking by the
Incredicoaster on Pixar Pier a couple of days ago and stopped by to chat with a Cast Member at the attraction. They shared that you should be able to film with a wrist strap and the device secured to your person. Bear in mind that safety is the top priority, and because loose articles can be hazardous on attractions, you may be told that you won't be able to film. You can always check with a Cast Member before riding and keep in mind that they have everyone's safety in mind first and foremost. It's best to stay flexible, like Elastigirl.
It sounds like you've also been doing your research (Yay!) and have already checked out the list of
prohibited items in the park rules. As Edna Mode says, "Luck favors the prepared." You'll also want to keep in mind that any filming you do during your visit should be for your own personal use and not for unapproved commercial purposes.
