we'll be in disney the week leading up to thanksgiving. our last day in the park will be 11-22-11, so 2 days before the actual holiday. would we be able to find a thanksgiving meal 2 days early, or are they only served on the actual holiday?

You can guarantee yourself a traditional Thanksgiving dinner if you make reservations for Liberty Tree Tavern at the Magic Kingdom, Shauna.  The family-style offerings there include holiday-esque fare year round.  Guests are treated to turkey, stuffing and mashed potatoes and gravy (along with other comfort food favorites) day in and day out.  Other than that, I think most restaurants will be serving regular menu items until the actual Thanksgiving holiday, at which point most of the table-service locations will include traditional offerings.  Perhaps your best bet is to schedule dinner at Liberty Tree.  Enjoy!
