Hi, Christopher!
Welcome to the Disney Parks Moms Panel. A New Year's Eve Fireworks Dessert Party sounds like a fantastic way to ring in a magical new year while celebrating your Princess's sweet 16.
I am here to tell you guests' plans change all the time! In fact, when my 180 day booking window opened for Thanksgiving, both fireworks dessert parties available at Magic Kingdom were completely booked, but I continued to check the
online booking system and was just recently able to grab a reservation for Thanksgiving Day.
With a cancelation policy in place that charges a $10 fee per person for not canceling a dining reservation at least one-day prior, many guests are diligent at making sure they do cancel when plans change. I've been able to grab reservations at many of Walt Disney World® Resort's most popular locations by continually checking, many coming through last-minute.
Another great New Year's Eve offering is
Pixar Party: A New Year's Eve Celebration available at Disney's Contemporary Resort. This could be an additional option for you to consider, should reservations become available for this party full of character.

I hope this is helpful, Christopher! Sending you loads of pixie-dust that a magical reservation will open for you. Please do not hesitate to reach out to me with any additional questions you may have.
