I am one of those crazy people who stock up on Disney Gift Cards to receive the "perks" from my grocery store, so I have done this many times.
I have used the Disney Gift Cards from my grocery store on everything on my Disney vacation from dining to shopping to paying for my resort room. You may find a few locations (kiosks) that are cash only and cannot accept your gift card, but that is rare.

Buying the gift cards ahead of time is a great way to save up for your vacation (I get a $25 card whenever I go shopping and save them up for my vacations) and also a great way to get "perks" if your particular store offers free gas like mine does!
